I flew over 20,000 miles in the month of April. Is that a good enough excuse for my lack of posting recently? If that's not enough, I've spent the last 10 days trying to recover from a nasty sickness that I probably picked up while doing all that flying.
I thought I would have plenty of time to knit on the plane, but the personal entertainment device that had hundreds of movies distracted me on my flights to and from Tokyo. If I wasn't watching a movie, I was sleeping. I did manage to finish maybe 1 inch on the socks I'm knitting. I don't think I like sock knitting...even with the new knitting two socks on circular needles method. It bores me.
Anyway, I finally got back into the kitchen this week and made one of my favorite comfort foods--pizza! After six months of rice and beans in the Dominican Republic and lots of delicious sushi and udon in Japan, I'm enjoying some purely American food. It's also great to have a fully stocked kitchen with all the ingredients I need. I will have some more recipes to share next week since I'm planning to cook brunch for Mother's Day.
This recipe comes to you courtesy of the Pioneer Woman. I didn't make any changes, so instead of re-posting the entire recipe, I'll just give you the link so you can check it out over there. In case you don't have time to make pizza dough and let it rise, here's my alternative/scrappy recipe. It comes out tasting more like flat bread than pizza crust, but it works well when you want to whip up a pizza last minute.
I didn't plan ahead Pizza Dough
(If you're cooking for more than 1 person, I recommend doubling the recipe)
1 cup flour
1/2 tsp salt
2 tsp olive oil
1 tsp baking powder
Mix the dry ingredients together. Add the olive oil and mix thoroughly. Slowly add water, mixing with your fingers or a wooden spoon until you have a soft dough. Roll and place on a well oiled pan. Bake the dough 5-10 minutes before putting on sauce and toppings.
I'll end with a confession of my love for Crunchy Cheetos. I loooove them. I only allow myself small piles at a time so that I don't finish the whole bag in one sitting. While I was making this fairly healthy pizza, I was definitely snacking on Crunchy Cheetos. They're my guilty junk food pleasure. Mmm...
