This year, my Mom requested that she wouldn't have to cook or do dishes or have anything to do with meal preparation for Mother's Day. I decided to cook brunch and my Dad grilled steak and veggies for dinner. In the next few posts, I'll share the three main ingredients of our delicious brunch. Today we'll start with the easiest by far...a simple, yet delicious, fruit salad.
Before we get to the recipe, let me say that shopping for the ingredients for this brunch was pure delight. After six months in the Dominican Republic trying to scrape together meals with whatever ingredients were available, a US grocery store seems almost too easy. But I wasn't just shopping in any grocery store. I was in Whole Foods and I felt like a kid in a candy shop. The best part? My Dad was paying. ;-) Anyway, all that to say that this fruit salad will taste better if you use fresh, organic fruit. Farmer's market produce would be even better...or maybe you grow your own strawberries? Here in Colorado, we're expecting a winter storm with up to 10 inches of snow. So, no strawberries growing in my backyard.
Strawberry, orange, mint fruit salad
3 cups of strawberries, sliced
3 large oranges, peeled and cut
2 tablespoons brown sugar
2 tablespoons mint leaves, sliced thinly
Mix the strawberries and oranges in a large bowl. Sprinkle on brown sugar to coat fruit. Add in mint slices and toss. Serve cold.
There's something about the addition of the mint that brings out the flavors of the fruit and gives it a refreshing taste.
